Apple Cheesecake

Base:-
100 g Butter (Melted)
250 g Digestive Biscuit (Blended)
1 tsp Mixed Spice

Filling:-
500 g Cream Cheese
80 g Castor Sugar
1 tbsp Lemon Juice
200 ml Whipping Cream
3 nos Eggs

Apple Filling:-
3 nos Granny Smith Green Apple (peeled,cored,diced to small cubes)
2 tbsp Lemon Juice
50 g Castor Sugar
1 tbsp Cinnamon Powder

Method:-
Preheat the oven at 160ÂșC for 15 minutes.

Base
Mix the blended digestive biscuit and mixed spice in a bowl. Pour in butter and continue mixing. Press the mixture into a greased springform pan. Chill the base in the refrigerator for at least 15 minutes.

Apple Filling
Pour all ingredients for the apple filling into a sauce pan and cook until the mixture is thicken and the apple should be slightly soften. Set aside and let it cool.


Cheese Filling

Beat the cream cheese in a mixer until smooth. Pour sugar and mix with slow speed, add in eggs individually with lemon juice. At last, pour in the whipping cream.

Take out the pan from the refrigerator. Pour half of the cheese filling into the pan. Pour all the apple filling on top of the cheese filling and then cover it with the rest of the cheese filling. Bake it for 1hour 45minutes - 2hours using water bath method. Turn the oven off and let cake cool with the door closed for 3-4 hours. Chill the cake overnight before serving.

For water bath method:-

Wrap the bottom of the pan with aluminum foil to prevent water from going in. (i prefer to wrap it with 1-2 more layers for precaution)

Without using water bath method:-
When mixing the cheese filling, add 30g of cornstarch. Bake it for 45minutes - 1hour.
